Fennel with Orange and Strawberries Salad - The perfect picnic takeaway
I was on the hunt for the perfect fennel bulbs for many summers, however, could not grab my hands on it. My mercury levels would rise when I would see Giada De Laurentis episode reruns. She uses a lot of fennel in her dishes (not that I like her much, but yes, I would be honest in admitting that most of her dishes do look tempting to give a try). Anyways, today was my fennel day at our Local farmers market on Route 9. It is one of the best Farmers Market I have been here in the US. Everything fresh and economically priced. The best part being I get a array of just about every produce of the season.
Anyways, enough advertisement of our local market, now back to what I actually wanted to blog about. I made this amazingly refreshing salad that is so so perfect for a picnic takeaway. I can eat it all by myself if home alone, however, will be serving this for dinner tonight along with Egg Frittata. AND of course our daily dose of Dal-Chawal ;))).
As I had mentioned in my earlier blog about incorporating fruits in our everyday cooking, so this is another example of it. The scorching heat of the northeast, makes this salad so vulnerable. Here is what I added to my salad.
Half a bulb of fennel sliced
3 strawberries
some orange segments, plus the juice
and of course something green. Now you can blame this on my Indian origin, that I always have Cilantro or Coriander in my refrigerator. So I added that, but of course I would have loved to go with either some Chives or Parsley if I had on hand.
Also, fianlly simple basic vinaigrette of Extra Virgin Olive Oil, French Mustard, Red Wine Vinegar, Salt and Pepper (I personally add just a couple of teaspoons of salad dressings since I feel it is something that enhance the flavors of the salad ingredients).
